Truffle Verjuice Dressing
80 g Dijon mustard
20 ml balsamic vinegar
200 ml truffle oil
500 ml verjuice
400 ml olive oil
In a bowl, add the mustard and balsamic vinegar.
Blend with a hand mixer and slowly add the olive oil
Slowly add the verjuice, season to taste then add the truffle oil.
