3 Hearty Winter Recipes
There’s nothing better than waking up to a hot breakfast on a chilly morning or coming home to a cosy dinner to warm you up on a cold night. If winter’s giving you a brain freeze and you’re stuck for some inspiration, here are three staples I love whipping up during those nippy months.
Pappardelle with braised short rib 'rendang' and buffalo mozzarella
Who doesn’t love tucking into a bowl of pasta and curling up on the couch in winter? Especially if it’s got tender beef short rib and buffalo mozzarella!
The beef rendang is cooked in lemongrass, chilli, garlic, ginger and galangal and spices like turmeric and cinnamon – this dish is just what the doctor ordered.
Chicken tagine with sweet baked potato
This Moroccan tagine is packed with only good stuff. I like to use free-range chicken, if its organic – even better!
This dish has a hint of natural sweetness from the currents and sweet potato and a bit of crunch from the toasted pistachios, rice and fennel seeds. It’s an all-time favourite of mine.
Shakshuka (eggs baked in tomato sauce)
This Mediterranean dish is from my latest cookbook Sharing Plates. You can make shakshuka for breakfast, brunch, lunch or dinner, but I love making it on the weekend and putting it in the centre of the table for family and friends to share. This recipe is so versatile and easy to make and will keep you feeling satisfied for ages.
