BBQ Spiced Sirloin Steak with Green Beans & Confit Eshallots

Serves 6

Ingredients

  • 6 x 200g Sirloin, portioned

  • Luke’s BBQ spice

  • 600g baby green beans, topped

  • 60mls extra virgin olive oil

  • 4 eshallot diced finely

  • 3tbspn toasted almonds slivers

  • Seasoning

Method

  1. In a large saucepan place the eshallots and extra virgin olive oil and cook slowly until tender. This will take up to 15 minutes

  2. In a pot of simmering water with salt in it, place the beans in. Cover with a lid and cook for about 5-6 minutes or until tender (do not overcook)

  3. Drain the beans in a colander and then place in a mixing bowl, add the shallot and oil, toasted almonds and mix. Season and reserve

  4. Pre-heat a grill to a hot/medium heat

  5. Season the pieces of sirloin with sea salt and freshly ground black pepper, and rub in the BBQ spice.

  6. Place the sirloin on the grill and cook to your desired degree, take off and rest for 2 minutes before serving.

  7. Add the green beans to a plate and place the steak to the side
